A Beetroot Salad to Remember

Walking through the market, I was surprised by the abundance of beets. I had never cooked with them before, but decided to buy a few and give it a try.

The result was an incredible beetroot salad that I'll definitely make again. Here's how you can make it yourself:

Ingredients: -3-4 beets, peeled and diced -1/2 cup diced red onion -1/4 cup diced celery -1/4 cup diced cucumber -1/4 cup crumbled feta cheese -1/4 cup chopped parsley -2 tablespoons olive oil -2 tablespoons apple cider vinegar -salt and pepper to taste

Instructions: 1. In a large bowl, combine the beets, red onion, celery, cucumber, feta cheese, and parsley. 2. In a small bowl, whisk together the olive oil and apple cider vinegar. Season with salt and pepper to taste. Pour over the vegetables and stir until everything is coated. 3. Serve chilled or at room temperature. Enjoy!
