Ingredients:

1 bunch of beets (red or golden)

1 handful of arugula

1/4 cup crumbled feta cheese

1/4 cup pine nuts

2 tablespoons olive oil

1 tablespoon balsamic vinegar

salt and pepper to taste

Directions:

  1. Preheat your oven to 375 degrees F (190 degrees C). Cut the beets into bite-sized pieces, discarding any greens or rootlets. Place the beets onto a baking sheet lined with parchment paper and drizzle with olive oil and balsamic vinegar. Sprinkle with salt and pepper to taste. Roast for 25-30 minutes, or until tender. Let cool slightly. 2. In a large bowl, combine the roasted beets, arugula, feta cheese, and pine nuts. Season with additional salt and pepper if needed. Serve immediately. Enjoy!

Instructions:

  1. Preheat oven to 375°F.

  2. In a small bowl, whisk together balsamic vinegar, honey, Dijon mustard, salt and pepper, to taste. With a slow and steady stream, add olive oil until dressing is emulsified.

  3. In a large baking dish, toss together beets, garlic and dressing until beets are evenly coated. Roast for 20-25 minutes or until tender.

  4. Once beets have cooled slightly, add blue cheese and pecans. Serve immediately.

-1 lbs of beets -4 slices of bacon, diced -1/2 cup of crumbled blue cheese -1/4 cup of balsamic vinegar -1/4 cup of olive oil -salt and pepper to taste

  2. Trim the ends off the beets and wrap them in foil. Place them in the oven and bake for about 45 minutes, or until they are fork tender.
  3. Let the beets cool slightly, then slip the skins off. Cut into bite size pieces.
