I love a good beetroot salad and this one with arugula, feta, and pine nuts is one of my favourites. The sweetness of the beets pairs so well with the peppery arugula, salty feta, and nutty pine nuts. It's easy to make and perfect for a light lunch or dinner.
Ingredients:
1 bunch of beets (red or golden)
1 handful of arugula
1/4 cup crumbled feta cheese
1/4 cup pine nuts
2 tablespoons olive oil
1 tablespoon balsamic vinegar
salt and pepper to taste
Directions:
- Preheat your oven to 375 degrees F (190 degrees C). Cut the beets into bite-sized pieces, discarding any greens or rootlets. Place the beets onto a baking sheet lined with parchment paper and drizzle with olive oil and balsamic vinegar. Sprinkle with salt and pepper to taste. Roast for 25-30 minutes, or until tender. Let cool slightly. 2. In a large bowl, combine the roasted beets, arugula, feta cheese, and pine nuts. Season with additional salt and pepper if needed. Serve immediately. Enjoy!

-1/2 cup balsamic vinegar -1/4 cup honey -1 tablespoon Dijon mustard -Kosher salt and freshly ground black pepper, to taste -1/4 cup olive oil -2 cloves garlic, minced -8 ounces beets, julienned -1/4 cup crumbled blue cheese -1/4 cup chopped pecans

Preheat oven to 375°F.

In a small bowl, whisk together balsamic vinegar, honey, Dijon mustard, salt and pepper, to taste. With a slow and steady stream, add olive oil until dressing is emulsified.

In a large baking dish, toss together beets, garlic and dressing until beets are evenly coated. Roast for 20-25 minutes or until tender.

Once beets have cooled slightly, add blue cheese and pecans. Serve immediately.
Warm Beet and Bacon Salad

Ingredients:
-1 lbs of beets -4 slices of bacon, diced -1/2 cup of crumbled blue cheese -1/4 cup of balsamic vinegar -1/4 cup of olive oil -salt and pepper to taste
Instructions:
- Preheat oven to 375 degrees F.
- Trim the ends off the beets and wrap them in foil. Place them in the oven and bake for about 45 minutes, or until they are fork tender.
- Let the beets cool slightly, then slip the skins off. Cut into bite size pieces.
- In a skillet, cook the bacon over medium heat until crisp. Remove with a slotted spoon and drain on paper towels.5. In a bowl, whisk together balsamic vinegar, olive oil, salt and pepper.6. Add beets, bacon, blue cheese and toss to coat. Serve at room temperature or chilled.
